Reflux Still Operation

The Polyhoenix Air Still Pro can be used as a Pot Still or a Reflux Still.

Pot Stills are generally used to make spirits such as Whisky, Rum, Brandy, Gin from an appropriate wash. So, Whisky is distilled from a malt wash, Rum from a molasses wash, etc.

Reflux Stills include packing in the column which causes fractioning of the vapour (refluxing). This, combined with a slower output (in this instance forced by using a narrower Outlet Nipple) means that the flavours and by products of the wash are stripped so that pure ethanol only is distilled from the wash.

Generally, in order to produce the best quality neutral spirit, a Stripping Run and then a Spirit (Reflux) run would be performed. If you are starting with low wines then a stripping run may not be necessary. In this case start with a Spirit Run.

  1. Discard the spent wash that remains in the boiler. Ensuring the boiler is cool enough to handle, rinse it out - it does not need to be cleaned thoroughly - a good rinse will suffice

  2. Pour the collected low wines into the boiler and dilute to at least 40% ABV or less. Ensure the boiler is filled to no higher than the MAX level indicator

  3. Attach the Still Head to the Boiler

A typical Reflux (Spirit) Run will take up to approximately 4 hours with a 5L wash

Fill the boiler with up to 5L of the wash. NOTE: Do not overfill as this can cause puking, blockages or other issues
  • Attach the Still Head to the Boiler

  • Ensure the Polyphoenix Air Still Pro is on a stable, level surface and has plenty of clearance

  • Place a suitable collection vessel under the Outlet

  • (If using the RAPT Brew App) Select Pot Still Mode from the Air Still Pro Device screen

  • (If using the on board controller) Select Pot Still Mode under Distilling Modes

  • On the on board controller, use Select and the Up and Down buttons to navigate to Start Heating. Use Select to start the heating, which begins the distillation process

  • As the wash comes to a boil, the fan and pump will turn on automatically. Once the wash is boiling, the distillate will start to collect through the Outlet Nipple

  • The first 50ml of the wash will be diverted to the foreshots collection jar. This must be discarded as it potentially contains harmful byproducts of distillation

  • The Polyphoenix Air Still Pro will continue to run until the End Temperature is reached. The ABV of the distillate will drop over this time as the alcohol in the wash is boiled off and distilled. When performing a Stripping Run, it is not necessary to collect cuts or seperate heads, hearts and tails - collect all distilled spirit. This is known as the 'low wines'

  • Once the boiler cuts off, wait until the Polyphoenix Air Still Pro has cooled enough so it can be safely handled, and then proceed to the next step

  • Install the Large Spiral Prismatic Packing in the column by removing the column cap and gin basket and carefully pouring the SPP in
  • Install the 0.3mm Outlet Nipple. NOTE: The 0.5mm Outlet Nipple can also be used. This will speed up the run but drop the purity to approximately 90%. For the purest and best results, the 0.3mm Outlet Nipple is recommended

  • Ensure the Polyphoenix Air Still Pro is on a stable, level surface and has plenty of clearance

  • Place a suitable collection vessel under the Outlet

  • (If using the RAPT Brew App) Select Reflux Still Mode from the Air Still Pro Device screen

  • (If using the on board controller) Select Reflux Still Mode under Distilling Modes

  • On the on board controller, use Select and the Up and Down buttons to navigate to Start Heating. Use Select to start the heating, which begins the distillation process.

  • As the wash comes to a boil, the fan and pump will turn on automatically. Once the wash is boiling, the distillate will start to collect through the Outlet Nipple.

  • The first 50ml of the wash will be diverted to the foreshots collection jar. This must be discarded as it potentially contains harmful byproducts of distillation

  • The Polyphoenix Air Still Pro will continue to run until the End Temperature is reached. During a reflux run, only pure ethanol of up to 95% will be produced. The resulting spirit can then be diluted and as desired

  • Once the Polyphoenix Air Still Pro has cooled enough so it can be safely handled, so it is ready for the next run. Cleaning as soon as possible after use will help avoid off flavours or other issues

    Pot Still Mode

    1. Remove the packing (if installed in the column)

    2. Install the 1.2mm Outlet Nipple

    3. (If using the RAPT Brew App) Select Pot Still Mode from the Air Still Pro Device screen

    4. (If using the on board controller) Select Pot Still Mode under Distilling Modes

    5. and the Polyphoenix Air Still Pro

    6. Fill the boiler with up to 5L of the appropriate wash. NOTE: Do not overfill as this can cause puking, blockages or other issues

    7. Attach the Still Head to the Boiler

    8. Ensure the Polyphoenix Air Still Pro is on a stable, level surface and has plenty of clearance

    9. Place a suitable collection vessel under the Outlet

    10. (If making gin or similar) place your desired botanicals in the gin basket. Botanicals can also be placed in the wash in the boiler - it is common (for example) to place juniper berries directly in the wash when making gin

    11. On the on board controller, use Select and the Up and Down buttons to navigate to Start Heating. Use Select to start the heating, which begins the distillation process.

    12. As the wash comes to a boil, the fan and pump will turn on automatically. Once the wash is boiling, the distillate will start to collect through the Outlet Nipple

    13. The first 50ml of the wash will be diverted to the foreshots collection jar. This must be discarded as it potentially contains harmful byproducts of distillation

    14. In Pot Still Mode, the distillate will consist of foreshots, heads, hearts and tails. It is best practice to take cuts during the run in order to separate the various fractions of distillate. These can be saved and re-used, blended back into the hearts or discarded

    15. Typically the hearts of the run is the 'best' part of a pot still run. However, the heads and tails can also contain a lot of flavour elements so experienced distillers may prefer to blend small amounts of the heads and/or tails into the hearts

    16. The Polyphoenix Air Still Pro will continue to run until the End Temperature is reached. The ABV of the distillate will drop over this time as the alcohol in the wash is boiled off and distilled

    17. Once the boiler cuts off, make sure the cuts or collection vessels are labelled (to make blending etc easier)

    18. Once the Polyphoenix Air Still Pro has cooled enough so it can be safely handled, so it is ready for the next run. Cleaning as soon as possible after use will help avoid off flavours or other issues

    A typical Pot Still or Stripping Run will take up to approximately 3 hours with a 5L wash.

    If intending to produce pure ethanol in Reflux Mode, best practice is to run the wash through a Stripping Run. A Stripping Run is a fast run where all the distillate is collected. The distillate is then put back in the boiler, diluted to ~40% ABV and then distilled in

    The PolyPhoenix Air Still Pro can be controlled directly using the on board controller or remotely using the RAPT Brew App. Remote control requires a RAPT account and the RAPT Brew App, available for IOS and Android. For setup information refer to

    Functionality is duplicated between the App and the On Board Controller. Heating can only be activated on the on board controller.

    The display shows the following information

    Idle/Running for XhoursXX minutes - this indicates if heating is on, and how long the heating has been running

    Current Temperature - this is the current temperature of the Still Head

    End - this is the current end temperature of the Still Head

    Power - this is the boiler power (if heating is on)

    Setup AirStill - this is only available before the PolyPhoenix Air Still Pro has been registered to the RAPT Brew App. Select this to begin the

    Start Heating or End Heating turns power to the connected boiler On or Off. To shut down the PolyPhoenix Air Still Pro manually, use Select and the Up and Down buttons to navigate to Stop Heating. Use Select to stop the heating process

    Distilling Mode - select this to choose Distillation Mode. There are three options.

    1. Pot Mode - this sets an End Temperature of 98°C. Ensure SPP (Spiral Prismatic Packing) is removed for Pot Still Mode

    2. Reflux Mode - this sets an End Temperature of 82°C. Ensure SPP (Spiral Prismatic Packing) is installed for Reflux Still Mode

    3. Custom Mode - this allows the user to enter the desired End Temperature

    End Temperature is a set point at which power to the connected boiler will be turned off. This functions to stop the distillation run. The temperature at which the run finishes largely determines the lowest ABV collected.

    NOTE: Pot Still or Reflux Still modes can be selected with one button in the RAPT Brew App (if the PolyPhoenix Air Still Pro has been and connected to WiFI)

    The following options are available in the Settings Menu.

    To change any of the advanced settings enter the Menu by pressing Select . Once in the menu navigate to Settings and press Select

    Up or Down buttons to adjust the set value for the setting. To save your setting hit Select . To return to the menu without saving choose Cycle/Back

    Some options are on/off toggles that can be activated or deactivated from the Settings Menu directly.

    KB51193 PolyPhoenix Air Still Pro | Registration

    The PolyPhoenix Air Still Pro is part of the RAPT ecosystem.

    This means it can be connected to WiFI and registered to your RAPT account. Once connected and registered the PolyPhoenix Air Still Pro can be controlled directly through the RAPT app. This is recommended but optional - all functions can also be accessed directly through the on board controller.

    How to Register the PolyPhoenix Air Still Pro to RAPT

    Bluetooth Operation

    To connect and control the PolyPhoenix Air Still Pro remotely, you will need to download and install the RAPT Brew App for Android or IOS

    Once the RAPT Brew App has been installed, follow the on screen prompts to create an account (if required).

    To connect to the PolyPhoenix Air Still Pro, in the RAPT Brew App navigate to Add Device and select PolyPhoenix Air Still Pro

    Ensure the PolyPhoenix Air Still Pro is turned on. Open the on screen menu using the Enter button. Navigate to Setup Device and select with the Enter button. This will broadcast a Bluetooth signal that will be picked up by the RAPT App.

    Select the RAPT Airstill and select Connect.

    Once Connection is complete, you will be prompted to connect the Air Still to your WiFi network. Select the desired WiFI Network from the list and enter the correct password for that WiFI Network when prompted. Once the password is entered, hit Connect

    NOTE: The PolyPhoenix Air Still Pro can only connect to a 2.4gHz network

    The Air Still will now be configured for connection to the selected WiFi Network.

    Next, input the desired Device Name and select Register. NOTE: The Device Name can be changed in the App at any later stage.

    Once connected and registered, the PolyPhoenix Air Still Pro can be controlled directly through the RAPT Brew App. Swipe up from the Device screen to bring up the controls.

    On the main Device display are:

    Current Still Head Temperature: This is the current measured temperature in the Still Head

    Cut Off Temperature: This is the currently input cut off temperature (typically 82°C for Reflux operation, 96°C for Pot Still operation)

    ABV: This is the derived ABV of the distillate at the time of display

    Power: This is the current wattage of the connected boiler (400w for the PolyPhoenix Air Still Boiler)

    On the Controls panel:

    Select Mode: Pot or Reflux. See Modes for more detail

    NOTE: When in Pot Still Mode, ensure the SPP (Spiral Prismatic Packing) is removed from the column. In Reflux Still mode, ensure the SPP is installed in the column

    Manual Overwrite:

    Cutoff Temperature: The Still Head temperature at which the boiler will automatically turn off. This allows you to choose the temperature at which the still shuts off.

    After unboxing the PolyPhoenix Air Still Pro Head and the PolyPhoenix Air Still Pro Boiler, check that you have all listed components.

    NOTE: The boiler clamps are not concentric. This is by design to ensure that the Air Still Head is correctly oriented. When attached, the Reset button on the boiler will be to the left of the column, and the power outlet will be on the right as shown.

    NOTE: Do not plug the boiler in until assembly is complete

    Next, check that the Outlet Nipple is installed. For initial cleaning, we recommend swapping this for the 1.2mm Outlet. Spare Outlets are stored in the top of the Distillation Outlet (1). To remove the installed Outlet, unscrew it anticlockwise. To install a different Outlet, screw it in clockwise until snug. Finger tight is sufficient to seal

    Underneath the column, check that the stainless packing plug is secure. Remove the Column Cap (2) and Gin Basket (3)

    Carefully open the plastic bag filled with 7mm (OD) x 3.6mm. Carefully pour the SPP into the column. Replace the Gin Basket and Column Cap.

    To complete the assembly, the Air Still Head needs to be plugged into the Air Still Boiler. Then plug the included IEC cable into the IEC socket on the Air Still Column and connect the IEC cable to a standard 10amp power outlet.

    There is a Relief Valve under the Outlet Head next to the Foreshots Collection Jar. This is an important safety feature and should never be blocked.

    The relief valve will only operate if excess pressure develops in the Still Head. In normal operation, this is extremely unlikely. You may notice a couple of drips from the relief valve at the very start of a run. This is normal and nothing to worry about. If the relief valve continues to drip during the run the PolyPhoenix Air Still Pro will shut down automatically once the Ethanol Sensor threshold is triggered.

    If using an external boiler with the PolyPhoenix Air Still Pro Head, shut the boiler down or drop the power to the boiler if there are drips coming from the Relief Valve.

    It is highly recommended to clean the PolyPhoenix Air Still Pro before first use and after every run or as needed.

    Acid/Vinegar Cleaning

    The best way to clean a still is with a vinegar wash. This is also recommended before first use.

    Before cleaning the PolyPhoenix Air Still Pro for the first time, ensure that it has been

    Clean Boiler with hot soapy water

    Detach the boiler for the Air Still Head. Half fill the boiler with hot soapy water (dishwashing detergent or PBW are suitable for this) and give the boiler a good wash. Rinse thoroughly after cleaning

    After washing the boiler, fill the boiler with at least 3L and up to 5L of a 50/50 mix of water and plain vinegar (acetic acid). Other acids can be used, although the dilution rates will be different. For example, 1 Tbsp citric acid to 1L water. Complete of the Polyphoenix Air Still. Ensure the SPP is installed in the column so that it also gets cleaned. Plug the boiler into the Still Head with the attached cable. Connect the Still Head to a 10amp power outlet using the included IEC lead.

    Refer to Operation. Set the finish temperature to 101°C to higher. Select Start Heating.

    This will begin a distillation run. This process is called a Vinegar Wash or (sometimes) an Acid Wash and is the most common technique to clean a still. Allow the still to run until most of the liquid i the boiler has been collected. NOTE: The auto shutoff will not operate when boiling water as the temperature wil not rise over 100°C, so you will need to shut the boiler off manually once approximately 2L has been collected.

    Once the Air Still has been shut off, allow the PolyPhoenix Air Still Pro to cool completely. Do not attempt to handle any part of the still head or boiler until at a safe temperature.

    Once the still and boiler is cool enough to handle, empty the boiler, rinse it out and fill the boiler with between 3L and 5L of clean water. Repeat the above steps to thoroughly rinse the still and packing.

    Once the Air Still has shut off, allow the PolyPhoenix Air Still Pro to cool completely. Do not attempt to handle any part of the still head or boiler until at a safe temperature. The boiler can now be detached and emptied.

    Your still is now clean and ready to use.

    This process should be completed as needed to maintain your still in good order.

    The exterior of the PolyPhoenix Air Still Pro can be cleaned with a damp microfibre cloth and (if required) a mild soapy water solution.

    The Outlet Nipples are safe to soak in hot PBW should this be required. Ensure they are rinsed thoroughly before use.

    Under the column is a stainless threaded bung. Removing this allows the SPP to be dropped out of the Still Head quickly and easily. Ensure you position the column over a suitable container large enough to hold all the SPP before removing the bung.

    If you line the bucket that the SPP will be emptied into with a suitable mesh bag (such as KL01298 ) then the bag can be tied up to secure the SPP inside. The bag and SPP can then be run through the dishwasher, which is a great way to ensure all oils etc are removed.

    Using the PolyPhoenix Air Still Pro on an External Boiler

    The PolyPhoenix Air Still Pro is designed to be used with the 6L PolyPhoenix Air Still Pro Boiler which allows a batch (wash) size of up to 5L

    It can also be used on a larger boiler with the KL48682 PolyPhoenix Air Still - Lid Adaptor x 3" TC

    This adapter fits onto the PolyPhoenix Air Still Pro Head and allows easy connection to a 3" Tri Clover (or 2" or 4" TC Fitting with a suitable adapter).

    This is a fantastic solution if you wsih to distill larger batches than 5L but do not have easy easy to a suitable water source (as required for traditional distillation) or wish to distill indoors etc.

    Using the PolyPhoenix Air Still - Lid Adaptor x 3" TC with the PolyPhoenix Air Still Pro Head is extremely simple.

    The Lid Adapter clamps onto the PolyPhoenix Air Still Pro Head in the same manner as the PolyPhoenix Air Still Pro Boiler.

    You will then need a and to connect to a 3" TC column or reducer if using with a column that is not a 3" Tri Clover.

    The PolyPhoenix Air Still Lid Adapter is a perfect fit for other PolyPhoenix columns.

    To power the external boiler, it can be plugged in as normal. However, this means that the PolyPhoenix Air Still Pro cannot automate the run as power will not be shut off automatically when the End Temperature is reached.

    It is recommended to use a Male IEC to 3 pin mains adapter so that the boiler can be powered by the IEC out of the PolyPhoenix Air Still Pro. The boiler will then be supplied power by the PolyPhoenix Air Still Pro and thus will automatically turn off when the End Temperature is reached.

    The PolyPhoenix Air Still Pro Head has a maximum power handling of up to 600W

    If this is exceeded then there will likely be leaking from the Still Head, the Ethanol Sensor can be tripped or the Relief Valve may vent.

    The actual power output that can be used with an external boiler will vary depending on a number of circumstances, to account for environmental factors and losses.

    Power will be 'lost' before reaching the condenser through factors including but not limited to:

    • Boiler insulation or lack thereof (such as a neoprene jacket)

    • Height of column

    • Use of packing or bubble plates in the column

    • Size of wash proportionate to the boiler

    This means that generally more power will need to be used in order to achieve a good boil and distillation run. However, should any leaks, vapour loss or other similar symptoms occur, this is a very strong indication that too much power is being used.

    Using a ) allows for fine power control to most 10amp boilers and is recommended.

    When using a 35L Digiboil or 35L BrewZilla with a neoprene jacket (to prevent losses through the boiler wall) then you will generally get a good result with using just the 500W element. However, the run may be slower as a result. With a 65L Digiboil or BrewZilla the 1000w element is generally the best option provided that no jacket is fitted to the boiler. This may be too much power depending on other factors as above.

    When using any electrically powered product, basic safety precautions should always be followed, including the following:

    WARNING – to reduce the risk of fire, electrical shock or injury to persons or property

    • WARNING – Do not touch the metal parts of the still without gloves during or after operation – it will be VERY HOT and could cause burns.

  • WARNING - Do NOT remove the still head while liquid is boiling.

  • WARNING – Do not overfill boiler. IF THE BOILER IS OVERFILLED THERE IS A RISK THAT BOILING LIQUID MAY BE EJECTED.

  • Never lift a pot containing hot liquid (any liquid hotter than 45°C). Always use the tap or pump to drain the vessel completely. If no tap or pump exist then use a jug to hand-scoop the hot liquid out of the vessel before trying to lift or move the vessel.

  • Only lift the vessel once the liquid cools below 45°C or once the vessel has been emptied.

  • Regularly inspect around the inlet of the power inlet socket for liquid or moisture. If liquid is evident around power connectors, do not use appliance and dry thoroughly before use. If liquid is present continuously, check for water leakage and if necessary return to supplier for repair.

  • Always operate the still from a power source of the same voltage, frequency and rating as indicated on the product identification plate.

  • This appliance is not intended for use by young children or infirm persons unless they have been adequately supervised by a responsible person to ensure that they can use the appliance safely.

  • Do not operate any product with a damaged cord or plug, or after the product malfunctions or is damaged in any way. Return the complete product to the place of purchase for inspection, repair or replacement.

  • This appliance should be used with a residual current device (safety switch). Consult a qualified electrician for advice.

  • To reduce the risk of electric shock, do not immerse or expose the product or flexible cord to rain, moisture or any other liquid other than those necessary for the correct operation of the product.
